Our first attempt at making a wild ale! This will be our interpretation of an English Old Ale brewed in the traditional way. First we brew a big strong, sweet ale similar to a barleywine then we add it to our previously used Smooth Ambler barrel. We carefully added our culture of brettanomyces claussenii which is a wild yeast strain that was originally isolated from the barrels of strong English stocks ales over 100 years ago. We expect this will spend the next 9 months drying out this rich beer into a completely unique and complex creation! It could always go horribly wrong but either way we can’t wait!
