Scottish ale styles were designated by the amount of tax that was collected by the government, and the stronger the beer, the more shillings it cost! Today, Schilling ales are low-ABV, session beers with a caramel character developed through extensive boiling. Light toast, subtle sweetness, and a dry mouthfeel are all components of this balanced brew!

Ale goes well with clams, but do clams go well with ale? We think so! This American Ale is brewed with freshly shucked clams. Although it does not taste like clams, this ale does pair well with steamed clams. A Light and Crisp body is paired with spicy hops and a dry mouthfeel. A touch of coriander is added for dimension.

A Czech dark lager, or Tmavรฉ Pivo, is a reddish copper color with complex maltiness while also maintaining extreme drinkability. A touch of spicy Czech Sazz hops lends a hint of bitterness to mellow out the rich malt profile. Itโs a true storm of flavor in such a simple disguise!

The Breweryโs 1 year anniversary required the making of a very special beerโฆ An Imperial stout brewed with a complex blend of specialty malts on top of a rich foundation of English Marris Otter. The beer was conditioned for 3 months before being steeped with loads of Italian coffee and cacao nibs. Then aged for 2 months to allow its decadent flavors to merry together into a fantastically smooth, high ABV stout. A beer worthy for celebration of our amazing first year as a brewery! May many more years be in our future!!
