Thank you to Jefferson’s Bourbon for this beautifully aromatic barrel which we’re currently filling with a 9% Baltic Porter! We lagered this beer for over a month and it taste absolutely delicious. We hope that a little barrel character will really help nuance those subtle roasted notes and add a bit of old world charm to this forgotten style of lager.

Nothing is more exciting than filling a barrel and imagining what beer you will discover in a few months when it’s time to open it up!

😍😍 Nitro Beer 😍😍
Just replaced our nitro tap with this absolutely delicious oatmeal stout. This is Zack’s new favorite! And it’s even named after our cat named Belle with a bad eye!

One-Eyed Black Cat Stout (nitro)
Oatmeal stout, 5.2% ABV, 30 IBUs

When one has a one-eyed black cat, one makes a stout named in honor of that cat… This stout is brewed with oats for a silky texture. A complex blend of malts and the nitrogen makes for rich flavors giving the impression of a velvety chocolate Frappuccino. The full mouthfeel, restrained ABV, and balanced flavor create the perfect drinking stout. So good!

Always love the smell when we’re brewing up a smoked beer! People always ask how we add smoke to beer. Well, it comes from barley malt that has been kilned over an open flame which is how most malts used to be kilned way back when.

Today we are using beechwood smoked malt from Bamberg, Germany which is the home of the Rauchbier. This malt from Weyermann is the best of the best when it comes to rauch malts. We’ll be making a smoked Maibock just in time for spring! Don’t be afraid to try it.

Our first attempt at making a wild ale! This will be our interpretation of an English Old Ale brewed in the traditional way. First we brew a big strong, sweet ale similar to a barleywine then we add it to our previously used Smooth Ambler barrel. We carefully added our culture of brettanomyces claussenii which is a wild yeast strain that was originally isolated from the barrels of strong English stocks ales over 100 years ago. We expect this will spend the next 9 months drying out this rich beer into a completely unique and complex creation! It could always go horribly wrong but either way we can’t wait!

Back in 2022 around this time we were starting to finalize the plans to start this brewery and I remember us Coopers sitting around drinking a kölsch I had brewed on my home setup. I remember thinking that if we can brew something like this for us to drink after a hard day’s work, wouldn’t that be the most enjoyable thing. Well it’s 3 years later after dreaming about that scenario and here we are drinking homemade kölsch after a hard days work!

The Commodore’s Kölsch
German Kölsch, 4.9% ABV, 25 IBUs

Commodore Cooper has been brewing up a special batch of his light and bright kölsch. This refreshing beer reminds you of those easy drinking pilsners but has some yeast complexity that makes you want to try another sip! A classic Northern German ale that has been lagered to add that crispness we all love.

🦀 Double the Crab, Double the Flavor – New Monday & Tuesday Special!

It’s almost time to start drinking like the Irish and Mara’s got just the beer to kick start the season of the leprechaun! The Irish red ale which is essentially Ireland’s version of a pale ale. Ruby-red crystal malts, earthy balanced hops, and restrained character all meld together for a perfect cold weather session ale!

Red-Haired Mara
Irish Red Ale, 5.4% ABV, 25 IBUs

Her cheeks, they were a rosy hue. Red-Haired Mara is an Irish red ale brewed with rich Marris Otter Malt and refreshingly balanced red crystal malts. Earthy Golding hops and flavorful yeast make for a beer both for contemplation and a night full of dancing on your hobnails. No one is good enough for our red-haired Mara but she good enough for all.
